BBQ Lamb is Southern Thailand’s Masterpiece

For the class signature dish, lamb is marinated in special Thai herbs and spices and then simmered over a low barbecue fire until it is done to perfection.

I don’t think most westerners associate barbecued lamb with Thailand. Everybody knows about Phad Thai Noodles, Spring Rolls and other familiar dishes. Maybe that’s why my Thai Classic Favourites class is so popular. It includes just about all the dishes that have made Thailand famous.

But Muslims make up a large proportion of the Thai population and Muslims do not eat pork, a popular meat among Buddhists. However, Muslims do eat lamb and mutton. And their recipes for both are wonderful, as I learned in several trips to the South of Thailand, where the Muslim population is large.

So this class is my tribute to Thai Muslims and their great contribution to Thai culture. It is also one of my Premium classes and — at $70 plus GST — costs slightly more than my regular classes to cover the costs of the more expensive ingredients. But, believe me, it's worth it! BARBECUE LAMB SUPREME
Marinated in delicate Thai herbs and spices, the lamb is barbecued and served with chicken wings and fresh mango salsa, a refreshing change from English-style lamb.

CILANTRO AND PEPPER CHICKEN WINGS
These tenderly-baked chicken wings are delicious when dipped in the special dipping sauce.

PORK WRAPS
A little known but delicious Thai “Wrap Dish,” with ground pork stuffing inside Thai rice wraps.

LAMB CURRY
A hot and spicy curry dish simmered in special Thai herbs and spices with potatoes.
