Greetings from Thailand!
For the first weeks of our Thai vacation this year we were in Northern Thailand, whizzing around in a minibus with friends and family. It was great fun but exhausting also, as we crossed a mountain range to visit the northern cities of Chiang Mai and Chiang Lai. But the trip was very rewarding and we discovered many wonderful dishes on our
journey.
Oddly, though, it was not in the nighttime streets of Chiang Mai that I found my favourite dish, nor was it street food. It was during the day, at a little art gallery featuring classic Thai paintings and sculptures. There, an old lady prepared a dish that was famous even in my earlier years — Khao Soi Curried Noodles. Today, it is almost a signature dish for the city of Chiang Mai itself and a great favourite of tourists.
I am considering
making this dish the highlight of a new class based on other discoveries I made in Chiang Mai and Chian Lai.
