Hi everybody,

You won't want to miss a trip to the Flavour Trails next weekend. There are a whole lot of things going on!

We are proud to participate in this event, which has been an important North Saanich cultural celebration for years. We all got knocked a bit out of kilter by the Covid pandemic but we’re back once again — and looking forward to even more fun!

Flavor Trails is delivered in partnership with the District of North Saanich and Destination Greater Victoria, the North Saanich Flavour Trails Festival celebrates local farmers, fishers, food producers, chefs, vintners, brewers, cider makers, distillers & more! We will be open for visitors from 11 a.m. until 2 p.m. on Saturday, when we will also be serving FREE Thai food samples to visitors lucky enough to find us. I regret that we won’t be open on Sunday but we’ve had a very, very busy summer and I just need for this day to be OFF.

I encourage you to share this newsletter with friends or family and bring them along for a visit to North Saanich on the weekend. You won’t regret it, I promise you!

Chiang Mai's Famous Curry Chicken

This dish is usually served very mild but it can be spicily pumped up with whatever you wish.

Khao Soi Noodle Soup, is a delightful northern Thai delicacy! This chicken Khao Soi features tender meat simmered in a rich coconut milk broth, seasoned beautifully with aromatic spices, and bursting with flavour. It might be Chiang Mai’s most famous dish, as tourists continue searching for the very best version of the dish every year.

Classic Vegetarian Green Curry 

Yes, vegetarian curry can be every bit as delicious and exciting as one featuring beef, pork or chicken.

Thai Vegetarian Green Curry features a creamy coconut milk base infused with a fragrant blend of green chilies, lemongrass, galangal, and kaffir lime leaves. The curry is then simmered with a medley of colourful vegetables, such as  spinach, sweet potatoes, chicek peas and tofu. The vibrant green colour of the curry comes from the use of fresh green chilies and a generous amount of cilantro, adding a refreshing touch to the dish. This curry is a perfect balance of spicy, savoury, and sweet flavours. It is typically served with steamed jasmine rice, allowing the fragrant rice to soak up the rich and flavorful curry.

Yellow Thai Jasmine Rice

Bright yellow Jasmine rice is a startling variation on a very familiar grain.

Thai Jasmine rice, Thailand’s most popular variety of rice, is known for its delicate floral aroma and slightly sticky texture. It takes on a vibrant golden colour from the addition of turmeric. This golden spice, revered for its earthy flavour and potential health benefits, lends a subtle warmth and depth to the rice. The infusion process allows the turmeric's essence to permeate each grain or rice, resulting in a fragrant and visually appealing dish. The cooked rice retains its characteristic fluffy texture, while the turmeric adds a subtle earthiness that complements the rice's natural sweetness. This beautiful and flavorful rice serves as a delightful accompaniment to a variety of Thai dishes.

Sunday, August 25: Samui Island Festival

A wonderfully varied class filled with interesting dishes.

I created this class with the wonderful island of Samui in mind. We visited this southern Thai island many years ago and still treasure memories of the time we stayed on the beach and feasted on fresh seafood, Thai Salad Rolls, Coconut Beef and Samu Seafood Soup. This class will give you a taste of the good times we shared.

Saturday, August 31: Thai Classic Favourites

Thai Classic Favourites is our all-time most popular class and Spring Rolls are the most popular dish in the class.

This popular class begins with crispy Thai Spring Rolls, followed by a soothing bowl of Thai Coconut Soup, its creamy broth enveloping tender chicken pieces. The main course stars the famous Thai Phad Thai Noodles, with stir-fried noodles, vegetables, and your choice of protein. You can “tune” the heat of this dish using my famous Thai Chilli Garlic Sauce, customizing your heat level. 

A vibrant Vegetable Stir Fry with Cashews and Chili offers a delightful crunch and a touch of spice. The aromatic Red Curry Chicken, simmered in a rich coconut milk sauce infused with fragrant Thai Sweet Basil, completes the feast. 

Thai Classic Favourites is my most popular class for a reason….Or, I should say, many reasons!
