one Flavour Trail event — in July and August on weekends. Our thanks to everyone who booked in advance. Most of the classes are now fully booked. But four classes still have places open, although we expect they will fill up quickly. We’ve provided detailed description of each class, below.

Golden Nuggets in Grandma’s Hair, VEG: 6 places Saturday, July 26, 2025
Tofu and fresh pineapple chunks simmered in tamarind and pineapple juice, snuggled up in crispy rice noodles.

Imagine wandering through the bustling lanes of Northern Thailand until you come upon a host of food stands offering an astonishing variety of great Thai Food! Well, we’ve chosen the best of the bunch for our "Chiang Mai Street Food" class. You’ll learn how to unveil the secrets to Chiang Mai’s culinary crown jewel, Khao Soi Noodles—a creamy coconut curry, including tender and crispy
egg noodles, rich with turmeric, ginger, and lemongrass, often starring chicken or beef. Each bowl is perfected with a flourish of pickled red onions, lime, and chili flakes. We were the first on Vancouver Island to present this enormously popular dish from Thailand. You will also craft delicate Thai Steamed Buns, plump with savory fillings like BBQ pork. Discover the unique presentation of Creamy Fish in a Coconut Basket, a

embrace! Then, a "Beef and Basil Stir-Fry" delivers top-quality tenderloin enlivened by fragrant Thai basil and just enough chili to awaken the palate.
