There is a story behind this Duck dish. It all
started a few years ago, during one of our vacations in Thailand. I wanted Ry, my husband, to enjoy the very best duck dish I had ever tasted when I still lived in Bangkok. So, we travelled several miles through the usual crowded traffic to one of the most popular restaurants in the city, famous for miles around for the very best duck.
Nothing had changed. It was still as fabulous as ever! When we returned home, I wanted to make my own variation on
this dish and build a new class around it. One of the most important things I did was create a "West Coast Fusion" version, with a sauce based on the wonderful blackberries that grow wild on our property.
But the duck itself wasn't quite right and I have to admit it was Ry who suggested what was really needed to make our duck even better than the Bangkok version. However, you will only learn Ry's secret ingredient
