Thai Salad Rolls Highlight Next Tuesday’s Class
A few years ago, when my husband, Ry, and I were in Thailand we spent a week on the beautiful island of Samui, not having to worry about cooking for seven glorious days!

Every day we drifted along the beach and stopped whenever we found a little restaurant, or food stand, that looked promising. And every day we tried different recipes for breakfast, lunch and dinner.

We even made a list of all the recipes we had tried, with little stars beside those we enjoyed the most.When we returned to Canada, Ry and I pulled out our list and decided to create a new class based on our favourite dishes from that holiday.

And so was born Samui Island Festival, which includes Thai Salad Rolls.
Since I began hosting this class, Thai Salad Rolls have proven to be the most popular dish on the menu. And it's no surprise, with vegetables, prawns, rice noodles and chicken breast rolled in rice paper and dipped in peanut sauce! They are delicious, healthy appetizers that are easy to make and prepare ahead of time.

Best of all, you can enjoy these morsels with your guests, instead of having to lose yourself in the kitchen while everyone else is having fun!

Spicy Chicken Salad
This dish is great with an ice-cold drink on a hot night.

Red Snapper
Deep fried, smothered in sweet and sour spicy sauce and topped with cilantro.

Coconut Beef
Tender chunks of sirloin beef slow cooked in coconut milk and Thai curry.

Samui Seafood Soup
This delicious soup is a combination of many spices, flavours and fresh seafood.
