Southern Thai Specialty Dish Tops Tuesday Menu
The southern province of Rayong is one of Thailand’s more famous holiday spots.

My husband and I visited a few years ago and enjoyed our holiday very much. We swam and snorkelled and we visited a tropical Thai fruit farm, where we could pick delicious fruit straight from the trees. These included durian, mango, dragon fruit, and many more.

But my favourite experience in Rayong was, as usual, about cooking. At a little restaurant on the beach we enjoyed the best lamb curry I have ever tasted, a southern Thai specialty.

And, again as usual, when I got back home I did my best to copy that recipe and include it in my classes. So, long story short, "Layong Lamb Curry" tops the bill at my next class on Tuesday, November 17, at 6:30 p.m.

Lamb Curry
From Thailand’s Muslim south comes this delicious lamb dish, simmered in tamarind and curry sauce.

NOTE: We realize that many people simply do not like lamb and so we are prepared to substitute a beef curry dish for lamb, upon request.

Mekong Salad Rolls
These unusual rolls, packed with shrimp, fresh mint and pork, come from the Mekong river region.

Leaf-Wrapped Chicken
Chicken marinated in sesame oil and other spices is deep-fried in pandan leaves.

Barbecued Pork
Pork marinated in honey and soy sauce is gently simmered over a barbecue at low heat.

Chicken Noodle Soup
A gentle, lightly-seasoned soup made for simple enjoyment and pleasure.
