After I first arrived in Canada and married Ry, we used to dream about what we would do on our first vacation in Thailand. Ry wanted to swim and snorkel, and so we researched the best places in Thailand where we could enjoy both.
I had grown up in Thailand but I had never
visited any of its beautiful islands while I lived there. I was very hard working as a young woman and did not have much time for these kinds of pleasures. But now I was a married woman and it WAS time for these kinds of pleasures.
Sailing to the island of Samui in Southern Thailand.
So, Ry and I researched Thai islands and decided that Samui Island would be our best choice for what we were looking for at that time. Our decision was made after we spent hours poring over travel guides and scouring the web for photos and information about the island. We were pretty excited and expecting the very best!
The greatest thing of all is that we were NOT disappointed, not at all, by our trip! We spent several weeks swimming,
relaxing and, at the end of the day, dining at one of the many seaside restaurants on the beach, watching the sun go down....
It was a magic time....
Our menu on Tuesday, April 3, next week at 6:30 p.m. is a tribute to the wonderful food that we enjoyed on Samui Island so many years ago. We hope that you will enjoy it too! Only the very best jumbo prawns will do for my Samui Seafood Soup!
Samui Seafood Soup Inspired by the beautiful Thai island of Samui, this delicious soup is a combination of many spices, flavours and fresh seafood.
Spicy Chicken Salad Just made for chilled beer and good conversation on a hot Samui Island evening, while watching the sun go down.
Thai Salad Rolls Vegetables, prawns, and rice noodles rolled in rice paper and dipped in peanut sauce.
Red Snapper Deep fried, smothered in sweet and sour spicy sauce and topped with cilantro.
