A few years ago, before anyone had ever heard of Covid-19, we travelled to the beautiful island of Samui, Thailand’s second-largest island, located in the Gulf of Thailand.
We enjoyed swimming in the palm-fringed beaches and exploring the dense, mountainous rain-forest. But, of course, most of all we enjoyed the food and the people, and so we named our third cooking class Samui Island Festival, in honour of a local festival that was ongoing while we were visiting.
And we packed the class with the best of the Thai islands: Garlic Prawns, Green Curry Chicken and Mixed Vegetables with Chilli Sauce. We saved the best for last, though!
Yam Moon Sen is a very different dish and largely unknown to Westerners. It is made from spicy vermicelli noodles, cooked with chicken breast, shrimp and fresh herbs. Delicious!
Finally, we included one of Thailand’s most famous dishes, Tom Yum Talay, a seafood soup that has become a favourite world-wide. Not to be missed!
